Avocado & chicken Caesar salad - Australian Avocados

Ingredients

• 2 chicken breast schnitzels
• salt & pepper
• 2 tablespoons olive oil
• 1 Hass Avocado
• 3 heaped tablespoons good quality whole egg mayo
• 2 cloves of garlic, crushed
• ½ teaspoon Dijon mustard
• 1 teaspoon Worcestershire sauce
• juice of 1 small lemon
• ¼ cup shredded parmesan
• lots of cracked black pepper
• pinch of salt
• water to thin out if needed
• 2 cups stale cubed bread of choice
• 1 baby cos lettuce, shaved parmesan & sliced avocado for garnish
