Creamy Ravioli Soup - Sauced by Sunday

Ingredients

• 2 tbsp olive oil
• 1 tbsp butter
• 1 onion diced
• 1 carrot sliced into coins
• 1 lb ground Italian sausage
• Salt and pepper
• 4 cloves of garlic minced
• 1 tsp dried basil
• 1 tsp dried oregano
• 1-28 oz can crushed tomatoes
• 1 quart or 4 cups of chicken stock
• 20 oz fresh cheese ravioli
• 6 cups fresh baby spinach
• 2 cups half and half
• ½ cup parmesan cheese + more for garnish
