Ingredients

• 1⁄4 cup sunflower oil or other neutral oil
• 3 large egg yolks
• ½ cup + 2 tablespoons Coombs maple syrup
• 1⁄4 cup plus 2 tablespoons (55 g) sweet white rice flour
• 1⁄4 cup plus 2 tablespoons (50 g) millet flour
• 1⁄4 cup plus 2 tablespoons (40 g) oat flour
• 11⁄4 teaspoon baking powder
• 1⁄2 teaspoon fine sea salt
• 5 large egg whites, at room temperature
• 1⁄4 teaspoon cream of tartar
• 2 tablespoons granulated sugar
• 3 cups hulled and quartered strawberries
• ¼ cup Coombs maple syrup
• Strained juice from ½ a large lemon
• 2 tablespoons chia seeds
• 3⁄4 cup mascarpone
• 1 cup heavy whipping cream
• 1 teaspoon vanilla paste or extract
• 2 tablespoons cold Coombs maple syrup
• 2 pints baskets pretty strawberries, some hulled and quartered, some halved
