• 1 lb ground beef
• 2 tbsp taco seasoning
• 1/2 C water
• 3 cloves garlic , minced
• 2 tbsp lime juice
• 1 4oz can green chiles
• salt , to taste
• black pepper , to taste
• 8 oz colby jack cheese , shredded and divided
• 8-10 6" corn tortillas
• 1/2 C yogurt
• 2 chipotle peppers with sauce
• 1 tsp honey
• 1 tsp lime juice
• 1 clove garlic
• cilantro , for serving
• pickled red onions , for serving
