Lime-Coconut Artichoke Ice Pops
Keep the kids and kitchen cool this summer with these simply delicious and easy to make Artichoke Ice Pops.
Ingredients
- 1 Season & Steam® cooked artichoke (stem, heart and crown- no choke), prepare according to package directions
- 3 cups vanilla almond milk
- 1 cup pure lime juice
- 1 can (14 oz.) sweetened condensed milk
- ½ tsp.coconut extract
- green food coloring (optional) to get desired green color
- In a blender, combine the cooked artichoke with ½ the can of sweetened condensed milk. Blend on high until smooth.
- Pour the liquid into ice pop molds and insert a wooden stick into each. Freeze for 8 hours or until solid. These pops will keep in the freezer up to 2 weeks (if they last that long)!
