Lime-Coconut Artichoke Ice Pops

Ingredients

  • 1 Season & Steam® cooked artichoke (stem, heart and crown- no choke), prepare according to package directions
  • 3 cups vanilla almond milk
  • 1 cup pure lime juice
  • 1 can (14 oz.) sweetened condensed milk
  • ½ tsp.coconut extract
  • green food coloring (optional) to get desired green color
  • In a blender, combine the cooked artichoke with ½ the can of sweetened condensed milk. Blend on high until smooth.
  • Pour the liquid into ice pop molds and insert a wooden stick into each. Freeze for 8 hours or until solid. These pops will keep in the freezer up to 2 weeks (if they last that long)!
