Ingredients
- 1/2 red onion, chopped
- 1 garlic clove, crushed
- 2 bunches of Swiss Chard, red stalks removed
- 2 teaspoons olive oil
- 2 tablespoons butter
- 3 tablespoons All Purpose Flour
- 3/4 cup 2% milk
- 1 tablespoon Parmesan cheese
- pinch Kosher salt
- fresh black pepper
- Boil water in large pot
- In medium pan, add oil and butter, cook onions, garlic 3-4 minutes
- Stir in flour, whisk in milk, keep moving cook 2 minutes
- Roll up all chard leaves, diced small
- Cook in boiling water for 2 minutes, drain, press excess water out, dice again
- Add chard, Parmesan, season Kosher salt and pepper to sauce, stir well and serve (perfect with a good steak).
