Ingredients

• 3 pounds chuck roast, cut into 1-inch pieces
• 1/2 pound poblano peppers, diced
• 1 pound Anaheim or Hatch chiles, stems removed
• 2 jalapeño peppers, sliced
• 6 cloves garlic, minced
• 1 medium yellow onion, finely chopped
• 1 tablespoon bacon drippings or vegetable oil
• 2 teaspoons kosher sea salt
• 2 teaspoons freshly ground black pepper
• 4 cups chicken stock
• 1/2 pound fresh tomatillos, husked and halved
• 1 cup chopped fresh cilantro
• 1 tablespoon ground cumin
• 1 tablespoon dried oregano
• 1/4 teaspoon ground allspice
• 2 tablespoons corn flour
• 1 tablespoon freshly squeezed lime juice
• 1 teaspoon smoked paprika
• 1 tablespoon honey
