Fruit and Mint Salad with Serrano Ham
Fun and fruity, this peach, mint, and serrano ham salad has long been a staple of summer cuisine in Spain.
Ingredients
- 4 tbsp La Española Extra Virgin Olive Oil
- 2 tbsp lemon juice
- 1 tbsp honey
- Salt and freshly ground black pepper
- 4 oz rocket, spinach and watercress leaves
- 5 ripe peaches or nectarines, halved, stoned and sliced

- 2 oz manchego cheese
- 2 oz handful fresh mint leave
