• 30 g dried ancho chillies, trimmed
• 2 tsp fennel seeds
• 1 tsp coriander (cilantro) seeds
• 0.5 tsp ground cinnamon
• 1.5 tsp salt
• 1.5 tsp soft brown sugar
• 1 orange, juice only (optional)
