  • 3 double cut, pork loin chops
  • ½ cup marionberry-blackberry preserves
  • 3 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 2 tbsp avocado oil
  • 1 tsp champagne vinegar
  • ⅓ cup chicken bone broth
  • 1 bunch broccolini
  • 1 leek, white part only, thinly sliced
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 pinches maldon salt
  • 6 parsnips, peeled and chopped
  • 1 Japanese sweet potato, peeled and chopped
  • 10 sprigs of thyme, leaves removed and chopped
  • 1 cup chicken bone broth
  • 1 cup water
  • 1 tbsp ghee
  • ½ cup unsweetened coconut milk
  • 1 pinch salt
  • 1 lb shishito peppers
  • 2 tbsp olive oil
  • 1 pinch maldon salt
  • Juice of 1/2 a lemon
