Authentic Mexican Lentil Soup Recipe | Gran Luchito

Ingredients

• 2 tablespoons olive oil
• 3 bacon rashers, cut into small squares
• 1 onion, finely diced
• 1 garlic clove, minced
• 2 medium size carrots, peeled and diced
• 1 tablespoon Gran Luchito Chipotle Paste
• 1 tin, chopped tomatoes
• 1 1/2 tins cooked brown lentils, drained
• 500 ml chicken Stock
• A handful of parsley, roughly chopped
• 1-2 limes, cut in wedges
• 1 packet Gran Luchito Lightly Salted Tortilla Chips (optional)
