• 1 1/2 teaspoons Dijon mustard
• 2 teaspoons smoked paprika
• 1/4 cup fresh lemon juice
• 2 tablespoons white wine vinegar
• 1 cup extra virgin olive oil
• 1 fennel bulb
• 1 red onion
• 1/2 cup finely chopped fresh Italian parsley
