Avoschetta - Australian Avocados

Ingredients

• 150g Danish fetta cheese
• 2 garlic cloves, finely chopped
• ½ cup (125ml) extra-virgin olive oil
• 1 lemon, juice squeezed
• 250g punnet cherry tomatoes
• 4 tbs dukkah (see note)
• 2 tbs crushed pistachios (see tip)
• 1 avocado
• 2 slices good-quality sourdough bread
• 1 bunch fresh basil, leaves finely chopped
