Alper Sarikaya — Creamy Tortellini Soup

Ingredients

• 1 lb italian sausage
• 1 small yellow onion , diced
• 2 stalks celery , diced
• 2 large carrots , peeled and diced
• 3 cloves garlic , minced
• 1 tsp kosher sea salt
• 1/2 tsp black pepper , ground
• 1/2 tsp italian seasoning
• 1 tsp fennel seeds , crushed or chopped
• 1 6 oz can tomato paste
• 1/2 C dry white wine
• 1/2 C all-purpose flour
• 6-7 C chicken broth
• 14 oz cheese tortellini , refridgerated
• 2 C half and half
• 1 handful spinach , fresh, chopped
