• 4 eggs
• 1 1/2 cups whole milk
• 2 tablespoons brown sugar
• 1 teaspoon vanilla extract
• 1/4 teaspoon cardamom
• 1 teaspoon lemon zest
• 4 tablespoons butter, divided
• 8 thick slices brioche (challah or white bread works well too)
• 1/2 cup pure maple syrup, to serve
