Leek & Sausage Risotto

Ingredients

• 3 Smoked sausages chorizo
• 1 Leek thinly sliced
• 1 Onion chopped finely
• 2 Garlic cloves Crushed
• 250 grams Rice Arborio
• 1/4 cup Dry white wine
• 1.5 litre Chicken Stock
• 1 zest Fresh lemon
• 1 cup Frozen Peas
• 20 grams Parmesan cheese grated plus extra for garnish
• 0.5 cup Grated Cheese any combination of monterey jack tasty cheese
• 2 tablespoons Fresh parsley plus extra for garnish
• 2 tablespoons Olive oil
• 1 tablespoon Butter
• Salt & pepper to taste
