Creamy Tuna Tortellini Pasta - Nonna Pia's

Ingredients

• 500g cheese tortellini
• 1 tbsp olive oil
• 2 medium shallot, thinly sliced
• 3 cloves garlic, thinly sliced
• ¼ tsp chili flakes
• ½ cup sundried tomatoes, roughly chopped
• ½ cup pitted black olives
• 2 tbsp tomato paste
• 1 jar (660ml) Nonna Pia’s Siciliana sauce
• 1 can (170g) Ocean’s Solid White Tuna , drained and flaked
• 1 cup heavy cream
• 2 cups spinach
• 1 cup cheddar cheese, grated
• Salt and pepper, to taste
