Ingredients

• 150g brown basmati rice
• 1 onion
• 1 red pepper
• 2 garlic cloves
• 1 lemon
• 1 tsp dried oregano
• A pinch of dried chilli flakes
• 400g chopped tomatoes
• 2 cod fillets
• A handful of flat leaf parsley, leaves only
• 300ml + 200ml boiling water
• Sea salt
• 1 tsp olive oil
• Freshly ground pepper
