• 3 cups all-purpose flour
• 1 tsp kosher salt
• 2 tsp baking powder
• 1 tsp baking soda
• 1 tbsp ground cinnamon
• 3 large eggs
• 1 cup vegetable oil
• 1 cup granulated sugar
• 3/4 cup light brown sugar, lightly packed
• 1 tbsp vanilla extract
• 2 cups finely grated zucchini (no need to wring out)
• coarse sugar, for topping
