Ssam Time! Duck Carnitas Lettuce Wraps

Ingredients

• 4 duck legs
• 3 teaspoons sea salt
• 1 teaspoon black pepper
• 1 onion
• 2 dried chipotle chilies
• 8 dried plums (use apricots if you can't find plums)
• 1 head garlic
• 1 tablespoon whole black peppercorns
• 2 whole star anise
• Scant 1 cup duck fat
• 1 red onion
• 2 large habanero chilies
• Scant 1/2 cup freshly squeezed, strained lime juice
• 4 Baby Gem lettuces
• white sesame seeds
• 2 limes
