- 100 grams Wholemeal Flour
- 100 grams 00 Fine Italian Flour
- 390 grams Water
- 10 grams Salt
- 200 grams Starter (100% hydration)
- 5 grams Diastatic Malt 10*
- 50 grams Mixed-Grains (rye, wheat, oatmeal & maize)
- 2 grams Instant Dried Yeast
