• 1/2 cup (125 ml) plus 3 tablespoons (45 ml) sugar divided
• 1 tsp (5 ml) lemon zest
• 1 tbsp (15 ml) fresh lemon juice
• 1/4 tsp (1 ml) plus 1/8 teaspoon (0.5 ml) salt divided
• 1 1/2 tsps (7 ml) cinnamon ground divided
• 1 package (400 g) refrigerated pie crust (2 crusts)
• 3 tbsps (45 ml) corn starch
• 1 tbsp (15 ml) pure vanilla extract
• 1 tbsp (15 ml) water
