Chicken Cordon Bleu Pasta Bake - Danny's Delight

Ingredients

• 1 tbsp Olive oil
• 1 tbsp Unsalted butter
• 2 Medium shallots, finely diced
• 2 Medium garlic cloves, minced
• 10 oz chicken breast, cubed
• 1/2 cup Cooked ham, diced
• 3 cup Chicken stock, low sodium preferred
• 7 oz Small pasta, such as ditalini or small shells
• 1/2 cup Heavy cream
• 6 oz Swiss cheese, grated, divided
• 3 tbsp Panko breadbrumbs
• 1/4 cup Fresh parsley, chopped
• Sea salt and black pepper, to taste
