Zesty pork and pineapple meatballs

Ingredients

• 1 red onion
• 500 gram pork mince
• 1 egg
• 1/2 teaspoon salt and a grind of pepper
• 1/2 cup panko breadcrumbs
• 1/2 teaspoon dried chilli flakes
• 2 tablespoon soy sauce
• 1/2 cup white vinegar
• 1/3 cup brown sugar
• 1 tablespoon cornflour
• 1/4 cup plain flour
• 2 tablespoon oil
• 2 capsicums, deseeded, coarsely chopped
• 1 1/2 cup pineapple, cut into chunks
• 1 1/2 cup chicken stock
• cooked rice, to serve
