Ingredients: 1 1/2 lbs (700 g) boneless, skinless chicken breasts (approx. 4), cut into ½ inch cubes; 6 slices, bacon, chopped; 1/4 cup (60 ml) butter, cut into small pieces; 1 large red pepper, seeded and diced; 1 large yellow pepper, seeded and diced; 1 medium onion, diced; 2 jalapenos, seeded and diced; 3 cloves garlic, minced; 1/3 cup (75 ml) all-purpose flour; 6 cups (1500 ml) chicken broth; 3 medium red potatoes, peeled (if desired) and chopped into ½ inch pieces; 3 bay leaves; 1 tsp (5 ml) salt; 1 tsp (5 ml) black pepper; 2 1/2 cups (750 ml) frozen corn, thawed; 1 1/2 cups (375 ml) half and half 10% cream; Chopped green onions for garnish, if desired
