Ingredients

• 2 frozen sheets (350g) shortcrust pastry, thawed
• 2 tablespoons olive oil
• 1 red onion, thinly sliced
• 0.5 red pepper, diced
• 0.5 green pepper, diced
• 150 g button mushrooms, sliced
• 4 slices shoulder bacon, chopped
• 2 teaspoons thyme leaves
• 1 teaspoon finely chopped rosemary
• Salt and freshly ground black pepper
• 5 eggs
• 200 g sour cream
• 0.25 cup milk
• 2 teaspoons wholegrain mustard
• 0.5 cup freshly grated parmesan cheese
