Papa Fiasco’s Blueberry Walnut Coffee Cake – Echo Springs Blueberry Farm

Ingredients

• 1/4 cup butter, softened
• 1/4 cup real maple syrup*
• 1/4 cup honey
• 1 egg, beaten
• 1 1/2 teaspoons vanilla
• 1/3 cup milk
• 1 cup white flour
• 1/2 cup whole wheat flour
• 2 teaspoons baking powder
• 1 teaspoon cinnamon or to taste
• 1/2 teaspoon salt (optional)
• 2 to 3 tablespoons cream cheese, softened
• 1 cup chopped walnuts**
• 1 to 2 cups blueberries (may use frozen)***
• 1/4 cup confectioners’ sugar for topping
