Ingredients

• 1/4 cup (60 ml) olive oil
• 1 tsp ground coriander
• 1/2 tsp ground cumin
• Pinch of ground cinnamon
• 8 lamb loin chops, about 1 1/2 inches (3.5 cm) thick
• Salt and pepper
• 1 onion, finely chopped
• 2 tbsp (28 g) butter
• 1 red bell pepper, seeded and finely diced
• 1 zucchini, finely diced
• 2 cloves garlic, finely chopped
• 1 1/2 cups (375 ml) chicken broth
• 2 tbsp dried currants
• 1 1/2 cups (300 g) couscous
• 1/4 cup (11 g) parsley or cilantro, chopped
