BAKED MOZZARELLA CHICKEN PASTA – Dads That Cook

Ingredients

• 2 cups penne pasta
• 2 cups chicken cooked and cut into bite size pieces
• 1 tsp Italian seasoning
• 1 pinch salt and pepper
• 1 tbsp olive oil
• 2 tsp minced garlic
• 1 medium onion, diced
• 1 cup fresh mushrooms, sliced
• 1 package frozen spinach, thawed OR 3 cups fresh spinach
• 2 cups milk (skim, whole, or almond)
• 3 tbsp flour
• 1 cup pesto (see recipe below if you want to make your own)
• 1 cup shredded mozzarella OR fresh buffalo mozzarella, pinched into small pieces
