Crispy Potato & Sirena Tuna Pie - Sirena Tuna

Ingredients

• 4 x 95 g can Sirena Tuna Smoke Infused Oil
• 1 kg potatoes, peeled and diced
• 150 g butter
• 2½ cups milk
• Sea salt and freshly ground black pepper
• 2 leeks, white and pale green part only, cut in half lengthways then sliced 1 cm
• 2 tbsp chopped thyme
• 3 tbsp plain flour
• ¼ cup roughly chopped Italian parsley
• Zest and juice of 1 small lemon
• 1¼ cup grated cheddar cheese
• ½ cup panko breadcrumbs
