Winter Roasted Beetroot & Pumpkin Salad
This roasted pumpkin and beetroot salad is made with lentils, crumbled feta (or vegan feta), pumpkin seeds, leafy greens and a simple citrus dressing.

- 0.5 pumpkin
- 4 beetroot
- 120g Kale leaves
- 2tbsp olive oil
- 60g feta
- 1 can lentils
- 2tbsp extra virgin olive oil
- 1tsp Orange zest
- 2tbsp lemon juice
- 1tbsp orange juice
