Ingredients
- 2 T. Vegetable oil
- 1 medium Onion, diced
- 1 Garlic clove, peeled and crushed
- 2 C. broccoli, chopped
- 1 large Sweet potato, peeled and shredded (2 Cups)
- 2 C. Kunzler ham, diced, set aside
- 12 eggs (or 1 quart ready eggs)
- 1 C. Yogurt
- Salt to taste
- Cheddar cheese for garnish
