• 1kg butternut pumpkin, peeled, deseeded and chopped
• 1 cup (250ml) maple syrup
• 4 eggs
• 1 cup (250ml) single (pouring) cream
• ¼ teaspoon nutmeg
• 3 cups (450g) plain (all-purpose) flour
• 250g butter, chopped
• 1 cup (160g) icing (confectioner’s) sugar
• 6 egg yolks
• 2 teaspoons vanilla extract
• 2 tablespoons iced water
• 1 eggwhite, lightly beaten
• ½ cup (55g) roughly chopped walnuts
• 2 tablespoons brown sugar
• ½ teaspoon ground cinnamon
