Ingredients

• 4 ½ cups sliced zucchini (1/4 inch thick)
• 1/4 cup diced red onion
• 1 Tbsp. Olive oil
• 1 ½ cups of fresh raw corn oï the cob
• ½ tsp. Kosher salt
• 1/4 tsp. Ground cumin
• 1/8 tsp. Fresh cracked pepper
• ½ Tbsp . Fresh parsley
• ½ Tbsp . Fresh cilantro
• 1 ½ tsp. Fresh lime juice
