Sweet Potato Tart – Simmer + Sauce

Ingredients

• For the Tart Dough:
• 2 1/4 cup all-purpose flour
• 1 cup cold unsalted butter, small dice
• 2 tablespoons sugar
• Dash of salt
• 1/4-1/2 cup cold water
• For the Sweet Potato Filling:
• 2-3 large sweet potatoes (about 1 1/2 cups cooked and pureed)
• 1 cup light brown sugar
• 3 eggs
• 1 1/2 cups heavy cream
• 2 teaspoons vanilla extract
• 3/4 teaspoon cinnamon
• 1/4 teaspoon nutmeg
• 1/4 teaspoon salt
• Pinch of mace
