Ingredients

• 6 medium beetroots, washed and leaves removed
• 200g feta cheese
• 2 tbsp Greek yoghurt
• 1 tbsp lemon juice
• 3 large handfuls baby salad leaves
• Handful of seasonal edible flowers (optional)
• Salt and freshly ground black pepper to taste
• 100ml olive oil
• ½ tsp chilli flakes
• 1 tsp cumin seeds
• 1 tsp nigella seeds
• 1 tsp fennel seeds, lightly crushed
