• 1/4 cup (30g) all-purpose flour
• 1 cup (240ml) beef broth
• 1 (14.5 oz) can crushed tomatoes (411g)
• 2 tbsp (30ml) Worcestershire sauce
• 1 tbsp tomato paste
• Salt and freshly ground black pepper, to taste
• 2 lbs (900g) russet potatoes, peeled and quartered
• 1/2 cup (120ml) milk, warmed
• 4 tbsp (56g) unsalted butter, softened
• 1/4 cup (60g) sour cream
• Salt and freshly ground white pepper, to taste
• 2 oz (56g) shredded cheddar cheese (optional)
