• Rice paper rolls:
• Thinly sliced carrots
• Thinly sliced spring onions or leeks
• Fresh mint
• Fresh coriander
• Thinly sliced cucumber
• Thinly sliced red bell pepper
• Spicy Mayo Dipping Sauce:
• ¼ cup mayonnaise
• ¼ cup tomato sauce
• 1 tsp (5 ml) hot sauce
• Sweet chili dipping sauce:
• ¼ cup rice vinegar
• 2 Tbsps. (30 ml) water
• 2 Tbsps. (30 ml) maple syrup
• 1 Tbsp (15 ml) soy sauce
• 1 clove garlic grated
• 1 small piece ginger minced
• 1 small green chili chopped
• Juice of 1 lime
