Ingredients

• 8 eggs
• 2 tbls (30 ml) oil-packed sundried tomatoes, drained and chopped
• 1/4 cup (20 g) finely grated Parmesan cheese
• 1/4 cup (25 g) grated cheddar cheese
• 1 tbsp fresh basil, finely chopped
• 1 tsp fresh mint leaves, finely chopped
• 1 Basic Fiddleheads recipe
• 1 garlic clove, finely chopped
• 2 tbsp butter
• 1 tbsp (15 ml) olive oil
