• 2 Apples
• 1 puff pastry sheet
• 2 cups shredded Manchego cheese
• 1 Tbsp finely chopped chives
• 1/2 tsp pepper
• 1 egg
• 1 Tbsp water
• Salad:
• 6 cups arugula
• 1 Tbsp balsamic vinegar
• 1 Tbsp apple cider
• 1 Tbsp olive oil
• Shredded Manchego cheese
