Ingredients

  • 2 pounds grass-finished beef stew meat
  • Sea salt and freshly ground pepper
  • 1 cup flour (gluten-free if you like)
  • 4 strips nitrate-free thick bacon, cut into 1/2-inch pieces
  • 4 tablespoons grass-fed butter with a splash of olive oil
  • 4 cloves garlic, minced
  • 1 bottle Côtes du Rhône red wine
  • 2 tablespoons fresh thyme
  • 2 fresh bay leaves
  • 15 small pearl onions, peeled, trimmed and left whole
  • 4 large carrots, cut into 2-inch pieces
  • 15 small potatoes
  • 1 package frozen peas
  • Parsley, finely chopped
