Minestrone With Spelt Pasta Recipe

Ingredients

• 1 tablespoon olive oil
• 300 grams fennel, coarsely chopped
• 1 yellow onion, coarsely chopped
• 2 celery ribs, trimmed and coarsely chopped
• 1 carrot, coarsely chopped
• 2 cloves garlic, minced
• 2 sprigs thyme
• 2 litres (8 cups) water
• 2 cans (400 grams) diced tomatoes (no-added-salt)
• 150 grams dried spelt pasta
• 2 cans (400 grams) four bean mix (rinsed)
• 175 grams cavolo nero, chopped coarsely (kale can be substituted)
• 1/3 cup grated parmesan cheese (fresh)
• 1 tablespoon thyme leaves
