White cake - Trois fois par jour

Ingredients

• 5 egg whites
• 1/2 cup milk
• 2 teaspoons almond extract
• 1 tablespoon lemon juice
• 2 1/2 cups all-purpose flour
• 1 tablespoon baking powder
• Pinch of salt
• 3/4 cup butter, cubed, at room temperature
• 1 3/4 cup sugar
• Currants, to garnish (or other fruit of your choice — or nothing!)
• 1 cup semi-salted butter, at room temperature
• 2 1/2 cups icing sugar
• 1/4 cup milk
