• ¼ cup finely diced onion salt and cracked black pepper to taste
• 3 bell peppers (red, orange and yellow), cut into very thin strips
• 1 tablespoon chopped fresh cilantro
• 2 pounds ground beef
• 1 small Vidalia onion, finely diced
• 2 tablespoons Worcestershire sauce
• 4 tablespoons grated sharp cheddar cheese
• 4 tablespoons grated Monterey Jack cheese
• 12 thick slices of Colby cheese
• 2 teaspoons of salt
