Turkey Pozole - Chefwiz.com

Ingredients

• 3 tablespoons of olive oil
• 2 medium yellow onions, cubed
• 2 medium fresh poblano chile peppers, seeded and cut into 1/2 inch strips
• 2 cloves of garlic, minced
• 1 tablespoon of chili powder
• 2 tablespoons of ground cumin
• 2 tablespoons of dried oregano
• 2 quarts of turkey broth
• 4 cups of cubed cooked turkey
• 2 cans (15 ounces each) of cannellini beans, drained and rinsed
• 2 cans (15 ounces each) of white hominy, drained
• 1 can (4 ounces) of chopped green chile peppers
• 1 cup of water (optional, adjust as needed
• Salt and pepper, to taste
