Ingredients

  • 115g dried chickpeas (or 400g tin of cooked chickpeas)
  • 1 tbsp olive oil
  • 25g butter
  • 1 large onion, finely chopped
  • 350g lamb, preferably neck fillet or shoulder, cut into 3cm cubes
  • 2 garlic cloves, finely chopped
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • ½ tsp cayenne pepper
  • ¼ tsp ground cinnamon
  • 1 l chicken stock
  • A generous pinch of saffron
  • 400g tin of chopped tomatoes
  • 55g long-grain rice
  • 2 red peppers, skinned, seeded and cut into thick strips
  • Juice of 1 lemon
  • 1 tbsp finely chopped flat-leaf parsley
  • Salt and freshly ground pepper
  • 1 bay leaf
  • 1 tbsp vegetable oil
