Ingredients

• 3 tbsp (45 mL) olive oil
• 1 onion, diced
• 1 red pepper, diced
• 3 cloves garlic, minced
• 1 tsp (5 mL) ground cumin
• 1/2 tsp (2 mL) smoked paprika
• 1/4 tsp (1 mL) each salt, pepper and cayenne pepper
• 2 tbsp (30 mL) tomato paste
• 1 can (796 mL) diced tomatoes
• 1/4 tsp (1 mL) hot pepper flakes
• 6 eggs
• 1 pkg (125 g) Mastro® Hot Calabrese Salami, sliced and chopped
• 1/3 cup (75 mL) finely crumbled feta cheese
• 2 tbsp (30 mL) chopped fresh parsley
