Ingredients

• 2 lbs. rockfish fillets
• 2 Tbsp. olive oil
• 1 whole yellow onion, large diced
• 3 cloves garlic, minced
• 1 cup dry white wine
• 1 (14 oz.) can diced tomatoes, with juice
• 1 (14 oz.) can plum tomatoes, with juice
• 2 cups fish stock
• 1/2 Tbsp. fresh thyme
• 1 Tbsp. fresh oregano, chopped
• 1 Tbsp. fresh basil, chopped
• 1 whole bay leaf
• 1/4 tsp. salt and pepper
• 1/2 whole lemon, juiced
