Ingredients

• 400g / 14 oz chicken breast
• ½ white onion (for step 1)
• 1 bay leaf
• 1 teaspoon black peppercorns
• 1 teaspoon salt
• 1 teaspoon olive oil
• 1 onion, sliced (for step 3)
• 1 jar of Gran Luchito Tomatillo Enchilada Sauce
• 125ml / ½ cup creme fraiche
• 10 Gran Luchito Soft Taco Wraps
• 150g / 5 oz grated cheddar cheese
• 1 handful of coriander, roughly chopped
• Salt and pepper (to taste)
