Recipe: Pecan Pie

Ingredients

• 1 1/2 cups all-purpose or unbleached flour, or whole wheat pastry flour, sifted
• 1 tablespoon sugar
• 1/4 teaspoon salt
• 6 tablespoons cold unsalted butter, cut into small pieces
• 3 to 5 tablespoons ice water (usually 4)
• 4 eggs
• 4 tablespoons (1/2 stick) unsalted butter
• 1/2 cup mild honey, such as clover
• 1 tablespoon rum
• 1 1/2 teaspoons vanilla
• 1/4 teaspoon freshly grated nutmeg
• 2 cups shelled pecans
• whipped cream for topping
